Is it possible to set a survey so that it doesn't show the responses in public?

There's information about our volunteers we'd like to collect that they probably wouldn't expect to be publicly available - I know they can tick the 'don't show this' box, but people could (will?!) miss that...

Yes. On the settings for your page, uncheck "show stream" and "show comments." The stream includes activities on the page and the text of comments. If you want to disable the stream, you will also need to disable comments or the check box for the stream will remain enabled.

Does unchecking “show stream” also prevent survey results from being publicly searchable using Google Search, site search, etc? We’d like to make sure they’re not displayed but also not searchable.

The simplest way to keep responses off the site for any given page is to just uncheck the “Show stream” checkbox. It works for any page, including surveys. You can also turn it off for the entire site from the site settings page.

Yes! You actually have a high level of granular control to who sees any page type. On the page’s dashboard, you can both adjust whether or not to have a stream of comments and responses and also set it to be viewed only by those with certain access rights and up. I suggest testing a little with a few friends without publicizing the page to get the settings just right for your organization and particular need.
