When I'm working with a filtered list, can I remove a contact from that filter list with the delete X to the right of the contact to remove them from the filter without deleting the contact info? I'm updating and want to remove them from the list as I've completed my update on them and would like to make my list shorter as I go through it.

Yep when in a list if you hit the - you can delete someone from the list. You can also delete people from a list in the top right of their profile.
