Ie. can I get a form or button to assign a tag to a user through template variables? Or can that only flow externally via an API call?
The only way to apply tags via a page is either setting up the “settings” page of that action page to automatically tag everyone who takes that action OR to use a signup (or volunteer signup) page to display tag checkboxes (or radio buttons) on the page itself. If you want to get creative with different things on a signup page triggering a tag, you could hide the checkbox and have some JavaScript check or uncheck that checkbox as well. There is not a liquid variable that will work on other page types to automatically tag people.
