For those that use Stripe to accept your one-time donations, what workaround do you use for recurring donations? Have you set up a separate PayPal account and separate landing page for recurring donations? Or is there a custom workaround that could be built on the back end to still use Stripe?

You can use your choice of payment processor connected to your nation on each page. So yes, you can have a your one off donation pages using Stripe, and your recurring pages using PauPa. There is no way currently to use Stripe to process recurring payments on NationBuilder.
