If my nation has a membership set up, say Regular Membership, which has an expiration time of 12 months, with six months grace, do I need to do any more than to pick Regular Membership from the drop-down in the New Donation? What happens if I don't put an expiration date in at the donation point, will the donor's new gift add 12 months to their current membership?

When adding a membership to a person's profile, you will need to set an expiration date for that membership, even if the expiration date is set under membership type.
Adding a membership without a date will not add months to the membership. It will simply update the membership with a blank expiration date.
However, if the Regular membership has an existing expiration date and you add a new Regular membership with a new expiration date, it will add the expiration date to the existing membership. This means if you have a membership with an expiration date of 08/30/2017 and you add another Regular Membership to that person with an expiration date of 12months, you will essentially update the membership to 8/30/2018.

To do what you need, having the new donation reset the membership period, you will need to manually edit the expiration date of the membership after you add the donation.
