I want to unassign myself as a point person for some people, but I don't want to assign them to anyone else. Can I do that?

You sure can!
On each person's profile in your control panel you can change (or remove) their point person by clicking on the Edit tab and using the point person drop-down menu.
To change a point person, click the drop down and select anyone with control panel access.
To remove a point person without replacing, click the "X" as pictured below.
Remember to click the "Save person" button at the bottom of the Edit screen to save your change.
You can also un-assign people in bulk by adding them to a list and batch clearing the point person field.

You’re probably assigned in the settings of whatever page people are signing up on. You can add a different person there.
