Many email clients, including both Gmail and Apple, apply their own styles to HTML emails. For example, many of them will add their own padding/margins to the sides and set the default link color to blue. It is likely that the two different clients have different default font sizes. This can likely be resolved by setting the font size in your custom email theme template using CSS.
