My color scheme is red, white, and gray, but these arrows are still blue.

You will need to edit the css for that item. In your theme files, go to theme.scss. In that file, search for flex-prev, flex-next. These is the classes for those arrows.
You can then find the 'background' attribute to change the color for that class.
