As with most design, there's no one-sized fits all approach to email design.
That being said, NationBuilder's email deliverability manager — Lilia Villa — wrote an excellent blog post about email design tips to optimize deliverability. You also might consider using Litmus' email testing and rendering previewer to test how your custom email template looks in a variety of popular email clients.
