Actually, there does not seem to be much documentation on accepting bitcoin payments via ANY method…anyone succeeded in setting this up?

Correct - none of our current payment processors accept bitcoin.
If you want to use a different payment processor than the one listed you will need to import your donations into NationBuilder.
