Some of my donors gave me cheques which I have entered in nationbuilder however those amounts do not show as part of the total on my fundraising goal on the donations page?

The amounts accrued towards a fundraising goal are a total of the donations marked as entered via that page. If you are manually entering checks that you want to count towards the goal for a page, add the page slug to the donation when you enter it. See the boxed field in this screenshot:
