One of our staffers went and checked of a couple of follow-ups by accident. Is there a way to look up recently checked off follow-ups? Or are they all gone now.

There is not currently a way to view recently removed follow-ups from within your control panel. The closest approximation (assuming that they were logged concurrently) would be recently logged contacts, which can be viewed by filtering the activities in your nation’s dashboard.
