We would like to be able to have our staff carry a tablet to events and allow people to volunteer and sign up on the tablet.
When you sent up the volunteer page and do the redirect back to that page. The previous person info is there. Is there a way to set an option to make have that info passed back?

When someone "signs up" to join your nation via your public website, they're automatically logged in as themselves (as you've experienced). This is intended to help engage individual signups, and works fantastically when people are signing themselves up organically.
If you have volunteers using iPads, etc., to collect a number of new volunteer signups at a public event, I would recommend having them add those new volunteers directly from within the Control Panel. To do so, navigate to People > New person, where you'll see a page like the one pictured below.
There, you'll be able to add the volunteer's personal info and select whether they are a volunteer, etc., but with the benefit of not "logging them in" when you save. Instead, the page will refresh to a blank "New person" form with a confirmation message at the top of the page.
