Am I correct in assuming that multi-day events can must also be ticketed events? Is it possible to have 1 event that spans 1 week with each day hosting a “shift”?

Multi-day events are not required to be ticketed events. And yes: it is possible to create a weeklong event that has 1-day "shifts."
