We want to sell tickets to fundraising events through NationBuilder (rather a third party site) but we need the receipt email to state the name of the event that the member purchased a ticket for. I can not seem to figure out how to accomplish this without creating a special "donation" page for each event.

You're actually on the right track: creating a different donation page for each event is actually a best practice for managing this sort of activity flow.
By creating a single-purpose donation page, you're able to customize the auto-response, the automatic tagging, etc., so that your supporters get a tailored experience. (And there's no cost associated with creating additional pages, so feel free to create away!)
