I'm wondering how to change the text of the autonotification that goes to the admin. For example, if I use a volunteer form (so I can use the check box feature) for a contact form, I can change the email to the person who filled out the form, but can't figure out how to change the notification email that goes to the admin receiving the notification.
I would much rather fix the underlying issue here, which is that you need to use the volunteer signup form to do something that has nothing to do with volunteers than make this notification email changeable.
So the feature here is an additional to the signup form that lets the person tag themselves with checkboxes.
FYI, if you only want them to be able to specify one classification/tag, you can already do this with the Signup page type. Multiple ones would be a new feature.

The default is good. And there is a need to be able to modify it for less common uses of the volunteer form.

It’s not really a volunteer form. The org staff that will receive notification of “new fan” will be really confused by the flood of seeming volunteer submissions.
We need to be able to rewrite the notification email so that the org staffer can make sense of it.
There is an additional, more general, issue as well. The notification reads “John signed the volunteer signup form, and wants to Jazz Fan.” Even outside of our use case, this isn’t likely to really make sense. 1) the volunteer form implies a single form, and there can be more than one. 2) and wants to assumes that roles are always volunteer activities, which may often not be the case.
If there was the ability to allow people to tag themselves with a different content type, that might solve our need – but would likely introduce another issue specific to that content type.
