I set up a donation page, but actually want it to be a paid membership page. Since I've set up subpages already and don't want to re-create everything, is there a way to change the page type/setting?

You cannot convert a donation page to a paid membership page. Instead, create the new paid membership page, but then edit the page settings on each of the subpages as shown to associate them with the paid membership page.
